Japonaise - Nougat Cookies
Japonaisemass : 120g Eggwhite, 100g Sugar, 100g fine grated
Hazelnuts, 20g Flour, 1 Prise Vanille und 1 Prise Salt; Nougatfilling : 120g Hazelnutnougatmass light, 20g Milkchocolate;
and : fine hashed Hazelnuts und Powdersugar;
Japonaisemass: Stir the Eggwhite with the sugar and the taste ingredients into a very stiff mass,than add the Hazelnut - Flour
mix to the Egg-white mass. Caution - do not stir it too much maybe the mass is getting too soft . Take an oval
stencil and cut out oval cookies which you than lay down on a baking metal ( don´t forget the baking paper) - If
you don´t have a stencil you simply can make oval cookies with a small glass. On the half amount of the ovals you
add hashed nuts and than bake it all at 180 degree Celsius 10 - 15 min., until the cokkies are getting a bit colored
Nougatfilling:
Melt the two ingredients in a waterbath which is not too hot and mix it to a smooth mass. Than you take two
oveal cookies, one with Hazelnuts and one without, add the Nougatmass on the smooth side and pushe them
together. Finish the cookies with a bit of Powdersugar.
